About the Journal
The cook, the kitchen and the rules behind every recipe you’ll find here.
I cook the seasons as they arrive, and write it all down.
Marigold Pantry Journal began in 2019 with a secondhand oven, a windowsill of herbs and a stubborn belief: that a recipe should work the first time you cook it. Every dish here is tested three times in my own kitchen — once for the idea, once for the method, and once exactly as written, the way you’ll cook it.
By training I’m a pastry cook; by appetite I’m a breakfast person. So you’ll find celebration cakes beside fifteen-minute morning bowls, French technique beside American comfort, and a great deal of Mediterranean sunlight in between. Nothing is fussy for the sake of it, and nothing is published until my neighbours ask for seconds.

How Every Recipe Earns Its Place
Tested three times
Idea, method, then exactly-as-written. If the third bake isn’t effortless, the recipe doesn’t ship.
Honest timings
Prep times include the chopping, the whisking and the washing-up paused in between. No chef-speed assumptions.
Seasonal first
Berries in June, stone fruit in August, citrus when winter needs it. The calendar writes half the menu.
