The doorbell rings, eight people are coming up the stairs, and you have fifteen minutes. This is my answer: blistered mini pizzettas on shop-bought flatbread, whipped ricotta crostini with hot honey, and a five-minute marinated olive mix that tastes like you planned it days ago. No one — no one — has ever believed the timeline.
The trick is heat and contrast: a ferociously hot oven for the pizzettas, cold creamy ricotta against warm toast, and olives glossed with orange and chilli. Pour something sparkling and take the credit.
Ingredients
- 4 small flatbreads, 200g passata and 2 balls of mozzarella
- Fresh basil, chilli flakes and good olive oil, for the pizzettas
- 250g ricotta, 1 lemon and 8 slices of ciabatta
- Hot honey (or honey plus a pinch of chilli) for drizzling
- 300g mixed olives, orange zest, rosemary and 1 chilli
- Sea salt and cracked black pepper to finish everything
Method
Crank the oven to its hottest setting with a tray inside. Warm the olives in olive oil with orange zest, rosemary and chilli for 3 minutes; tip into a bowl.
Spread the flatbreads thinly with passata, tear over the mozzarella, and bake on the hot tray 6–8 minutes until blistered. Shower with basil, chilli flakes and oil; cut into ribbons.
Meanwhile toast the ciabatta until golden. Whip the ricotta with lemon zest, salt and a spoonful of oil until completely smooth and cloud-like.
Pile the ricotta onto the warm toast, drizzle with hot honey and crack over black pepper. Serve all three snacks at once, while the pizzettas still crackle.
Elena’s Tips
- Less passata than you think — a wet base never blisters, it steams.
- Whip the ricotta a full 2 minutes; grainy ricotta is just ricotta, whipped is a revelation.
- Double the olives — the bowl always empties first, whatever else you serve.
